Malvani Masala Powder



 Malvani cuisine is from the Konkani region and the preparations are very spicy as well as delicious. I have been goig through these recipes and wanted to try some of them. As a base, I first wanted to get the powder ready. So here are the ingredients  for you to be able to prepare at home.

Ingredients needed for the Malvani / Konkani Masala Powder :
50 red chillies, whole dry chillies preferred
¼ cup coriander seeds
12 cloves
8 black peppercorns
2 tsps fennel seeds
2 black cardamoms
5 two-inch sticks cinnamon
1½ tbsps dagad phool
½ tsp cumin seeds
½ tsp nagkeshar
½ tsp mustard seeds
1 inch turmeric piece (preferred) or else you can use turmeric powder
½ tsp asafoetida
¾ tsp shahi jeera
1 nutmeg
½ star anise

How to prepare Malvani Masala Powder
Heat a fry pan without oil. Dry roast all the ingredients, separately, one by one , remove and keep aside.
Cool and bring  the ingredients to the room temperture. Grind to a fine powder.
These ingredients give you  about  80 grams of Malvani Masala Powder. Store the powder in air tight container and use as and when you need it.
